Kuah kacang aka kuah satay

Made kuah kacang to eat together with Nasi beriani.

Ingredients

250g peanuts(fried without oil and after that blend the peanuts half coarse and half ground)
1 big shallot (sliced)
3 cloves of garlics
2cm ginger
5 nos of dried chilies
a small piece of shrimp paste

1 stalk of lemon grass
2″ galangal
1/4 cup tamarind sauce
salt to taste
sugar (depends on how sweet you want the kuah kacang is going to be)- I used 1 cup of brown sugar and a small piece of palm sugar.

The preparation:

1.Blend all those bolded ingredients above.

2.Heat half cup of cooking oil in the wok. Throw in the blended ingredients in step 1 above. Keep frying until fragrant.

3.Put the lemon grass, galangal and keep frying until separated between cooking oil and the blended ingredients.

4. Add the tamarind sauce and then not to forget a pinch of salt to taste and sugar.

5.Put in the blended peanuts and add in some water ( make sure your kuah kacang not too thicken and not too watery, I used 2 cups of water )

6. Keep heating and stirring for almost half and hour.

7. Ready to eat!
