Ayam masak kicap ala mamak

You’ll need:
The recipe is from my fren, Zek..She made daging masak kicap ala mamak but I change to the chicken instead, since meat is not my cup of tea..this recipe is worth to try..I made it thrice last week since my husband loves it sooo much..thanks Z..recipe cilok hang ni.thumbs up la..sodap.hehee

500 grams chicken
1/2 onion sliced

Cardamoms, star anise, cinnamon stick and cloves
5 curry leaves

1 stalk lemongrass

1/2 cup tamarind juice

To blend – garlic, shallots and ginger

1 tablespoon curry powder

1/2 tablespoon chilli powder

1/2 tablespoon ground fennel

1/2 tablespoon ground cumin

1/3 cup dark soy sauce

Some salt to taste
Coriander/peppermint leaves

How to cook it:

Fried the chicken first with salt and tumeric.

In a wok, saute the sliced onions, cardamoms, start anise, cinnamon stick, cloves, curry leaves and lemongrass until fragrant.

Add the blended ingredients and the spices (to be made into a paste first by adding some water) and saute until the oil separates.

Add the fried chicken. then, add the tamarind juice. Bring to boil.

Lastly, add the soy sauce and salt. Bring to boil.

Garnish with coriander or mint leaves.
